Winter Is Coming - Butternut Squash Soup

Kids are back to school and well truth be told I have to get adjusted to getting back to our routine and back to making sure we are eating healthy and making sure we have something to keep us warm. Although we have been lucky so far as this Winter has been pretty mild to say the least and no snow that is until this week. So I knew I had to bring out this recipe out and will be making it tonight.


3 pounds butternut squash, peeled and cubed
2 tablespoons olive oil
1/2 teaspoon salt
1/2 teaspoon pepper
3 strips of turkey bacon, diced
1 cup diced yellow onion
1/2 cup diced celery
2 cloves garlic, minced
1 red jalapeno pepper, seeded and diced
4 cups low sodium chicken broth
1 tablespoon brown mustard
1 tablespoon honey
1/2 teaspoon 
1 cup of fat free sour cream
3/4 cup of chives (for garish)


Heat the oven to 425 degrees. Spread the squash in a nonstick 15x10x1-inch pan; drizzle with the oil. Sprinkle the squash with salt and pepper; stir to coat. Roast for 25 to 30 minutes or until tender, stirring once. 

Meanwhile, cook the bacon over medium heat until crisp, stirring frequently. Add the onion, celery, garlic and pepper to the bacon. Cook for 5 to 7 minutes or until tender, stirring frequently. Add the broth, cooked squash and all of the remaining ingredients except for the sour cream. Cook until thoroughly heated. Place half of the mixture in a regular blender container. Cover and blend until smooth. Pour the soup into a large bowl. Repeat with the remaining mixture. 

Return the soup to the stove and whisk in 1/2 cup of the sour cream. Heat the soup over low heat until the desired temperature is reached. Garnish each serving with a dollop of sour cream and chives.
