Dinner Entry and Dessert in an Hour

Days speeding by but we still have to ensure we try and make something healthy for the family to eat. What to do?! I don't know about your family but my gang love to get different meals and like to get surprised when I tell them YES that's healthy for you!

Today I'm sharing two simple recipes that you can have done in an hour and on your table ready to go!

Let's start with desert first shall we, I mean it's more fun that way right?

Chocolate Yummo Cupcakes

 The most moist chocolate cupcakes . Yields 16 cupcakes (1 cupcake 2 WW pts)

1- 12 ounce Diet Coke Can
Box of Chocolate Cake Mix

Mix together the soda and cake mix. Use a 1/4 measuring cup to pour the mixture into your cupcake filters make sure you do so as you should have enough for 16 cupcakes or in my cause I usually make the first 12 and then make a little cake for my oldest and he loves having his own cake.Follow the baking instructions that were stated on your cake mix and wait on the yummy aromas to fill your house

Now that we have desert ready let's get our Turkey meatballs recipe and get them ready.

One Point Turkey meatballs 

 Makes 28 meatballs (serving size 2- 1WW pt each)

1/3 cup of regular bread crumbs
2 tablespoons of your choice seasoning I use Flavor god (Hubby got it from Amazon. or you can you Italian seasoning
One egg 
Olive oil cooking spray
1 lb of lean ground turkey.

  Place all the ingredients in a large bowl and use those hands to make sure everything is incorporated together so get to mixing! (you can get your kids to do that part my kids love it!) To make the meatballs use a one inch ice cream scoop or measuring spoon to make them. Spray a 9x13 pan with the olive oil spray and preheat the oven to 350. Place the meatballs and into the oven for 30 minutes. Once it's done you'll be able to enjoy!  


 With the cupcakes they are so moist you really don't need any topping on them but if you like you could add a dollop of fat free whipped cream and enjoy.

For the meatballs I usually will serve it to the kids w/some pasta and sauce. For my Hubby and I we actually enjoy it with some steamed veggies.
