It's that time of the year again! Back to school it is. This is also the time where we are rushing to remember those quick but yummy after school snacks. Especially the first week of school it can be rough not only on your kids but you as well. That's why I dug up one of my favorite go to cookie recipes that my kids love and I can make them right before they get home.
Nothing like seeing their bright faces as they walk in and get that nice aroma of fresh baked cookies.
I take advantage of the supermarket sales when they have boxed cake mixes on sale because I have plenty of really quick and easy recipes that are other then just cake to make with the mix.
This is one of them. Now let's get baking! Here is what you will need.
1 Box Yellow Cake Box mix
1/2 veg. cup oil
2 eggs (I used 1 egg 1 egg white)
2 cups of chocolate chips
- Preheat the oven to 325
- Line baking pan with parchment paper
- Mix together all the ingredients expect the chocolate chips until you have Incorporated everything well then go ahead and mix (but not over mixing) the chocolate chips.
- Use a tablespoon to measure each cook on the sheet (I usually bake 9 at a time)
- Bake for 10-12 minutes (depending on your oven) once you see the sides golden brown time to get out and place on a wire rack to cool and bake the rest of your cookies!
