Since I'm all about the Pumpkin love right now I thought I'd share one of my family's favorite's recipe that actually was requested for this week. I love it because it's also healthy, low calorie and so easy to make.
Today I'm sharing a recipe for a pumpkin soup that is not only good but you don't need that many ingredients to make it.
- Pure Pumpkin (30 ounce can)
- Coconut Milk (13.5 ounce can)
- 4 cups of fat free vegetable or chicken stock
- 2 tsp of curry paste
- For garnish* scallion
This is my favorite part. Just add each of the ingredients into your crockpot I use my 7 quart crockpot and give a gentle stir to make sure everything is mixed.
Cover and cook on low for 4-5 hours or 3 hours on High (I prefer cooking on low it has a deeper flavor)
Once it's done serve and garnish with a bit of the scallion and enjoy.
