Let There Be Cake For One

Sure it's the start of the week but how about we start it with cake? In fact a single serve kind?

This is my  favorite to make when I want a little treat to celebrate making it through the week or surviving a 3 day weekend with the kids home or even a birthday that happens to fall on a Monday like it does for me today.

 All you have to do is get a cup/mug (make sure it's microwave safe) and I'm pretty sure you have the ingredients needed to make this in your house right now.







Also I made sure to make it a little "lighter" so no need to feel guilty!

 I forgot to add if you really want to spoil yourself add  scoop of your favorite ice cream.

Chocolate Happiness in a Mug
So good you might have to make another mug
Ingredients
  • 1/4 cup 1% light Buttermilk
  • 1 egg egg white
  • 1/4 cup mini chocolate chip
  • 1/2 tsp vanilla extract
  • 2 Tbsp salt
  • 2 Tbsp light brown sugar
  • 1 Tbsp sugar
  • 2 Tbsp Cocoa Powder
  • 2 Tbsp Self Raising Flour
  • 2 Tbsp unsalted butter
Instructions
In a small bowl melt the butter and mix in the chocolate chips and melt (be careful not to burn it!) in the microwave 5-10 seconds Whisk together the rest of the ingredients expect the flour. Do not over mix.Stir in the flour just until it is combined.( I will usually spray the mug w/a little "butter spray") pour batter into mug 1/2 ONLY (or you will have a mess to clean up!)Microwave 60-90 seconds (to check if it's done stick a toothpick in the middle. If the toothpick is clean it's done. If not microwave again for 5 seconds and do try again)
